Channeling Betty Crocker and a Raspberry Mousse Dessert

Ever since my dear friend, Sue, from Rue Mouffetard, sent me this apron, my culinary skills have went on overload.

Raspberry Mousse


Take one frozen pkg. of red raspberries, thawed
3T. sugar
2T. cornstarch
mix together in a small saucepan and bring to a boil stirring constantly for 2 min.

Take the 1 1/2 C. mixture and divide it into two



In the one (the measuring cup) add 2t. OJ (mine had also pineapple in it)

In the other raspberry mixture add (1) 8oz. tub of Cool Whip and fold in.



Take some Angel Food cake and break into small pieces in parfait or any glass dish



Drizzle with the raspberry mixture that has the OJ in it

Then take the raspberry with the Cool Whip and either dolop on top if it is in a parfait glass or smooth on top (like frosting a cake) if in a glass dish

See those yummy layers.
